Upgraded Avocado Toast
I’ve always felt avocado toast was good but could be something more than just guacamole on bread. This recipe intensifies the flavor of the avocado by adding a rich olive oil and herby flavor from the pesto along with creamy and tangy bits from the crumbled feta. Make sure your bread is toasted very well as it contrasts beautifully and adds bite to the smooth avocado.

Ingredients:
1 slice of sourdough or peasant bread, toasted
1 large ripe avocado
1 tablespoon of basil pesto
1 teaspoon of lemon juice
¼ teaspoon of chili flakes
Kosher salt
Black pepper
Grape tomatoes, halved
Feta cheese, crumbled
Instructions:
In a small bowl, mash together the avocado, pesto, lemon juice, chili flakes, salt, and black pepper using a fork.
Place your avocado mixture onto the toasted bread and top with the tomatoes and feta.
