Dump It Quiche

Ever feeling like your fridge is overflowing? Then this crustless quiche is what you can make! Its array of vegetables and fillings have you tasting so many flavors in one bite. Feel free to add more of any add-ins, because whatever you put into this quiche, it always turns out delicious.

Yields: 6-8 servings

Cook Time: 45 minutes

Total Time: 1 hour 10 minutes

Ingredients:

  • ¼ cup of diced red bell pepper

  • 1 scallion, chopped

  • ⅛ cup of diced white onion

  • A heaping ¼ cup of chopped fresh baby spinach

  • A heaping ¼ cup of chopped roasted potatoes

  • ¾ tablespoon of fresh chopped parsley

  • ¼ cup of diced ham (or ⅛ cup of bacon or sausage)

  • 6 large eggs

  • 1 cup of whole milk (do not substitute with fat free or 1% milk)

  • 1 cup of thickly grated white cheddar cheese

  • 1 tablespoons of grated parmesan cheese

  • ½ teaspoon of black pepper 

Instructions: 

  • Preheat the oven to 350º F.

  • Dump the first 7 ingredients into a bowl

  • In a separate large bowl, whisk the eggs and milk.

  • Stir in both of the cheeses to the egg mixture.

  • Add the pepper and the vegetable, herb, and meat mixture into the eggs. Stir until everything is evenly distributed.

  • Pour the mixture into a 9 inch, round, glass, pie baking dish.

  • Cook uncovered for 45 minutes. 

Suggestions:

  • If you are feeling vegetarian, you can replace the ham, sausage, or bacon with ¼ cup of: diced grape tomatoes, chopped kale, cooked asparagus, or cooked broccoli. 

  • There is no salt in this recipe! The cooked vegetables, potatoes, and meat add enough salt to the quiche.
