Mexican Baked Shrimp

Within 20 minutes, you’ll have these delicious shrimp ready and they will go perfectly in tacos, on rice, or by themselves. This recipe is all about the spices, so don’t skip out on any, and an added bonus is that they will leave you with a relatively clean kitchen!

Yields: 4 servings

Total Time: 20 minutes


Ingredients:

  • 1 tablespoon of dark chili powder

  • 1 teaspoon of ground cumin

  • 1 teaspoon of garlic powder

  • ½ teaspoon of onion powder

  • ¼ teaspoon of kosher salt

  • ¼ teaspoon of black pepper

  • 1 teaspoon of sweet hungarian paprika

  • 1 tablespoon of lime juice

  • 2 pounds of cleaned, deveined, and deshelled fresh shrimp

Instructions:

  • Preheat the oven to 400º F.

  • Mix together the first 7 ingredients in a small bowl.

  • Place the shrimp, spread out evenly, on a baking sheet.

  • Squeeze the lime juice over the shrimp, evenly coating them.

  • Coat shrimp evenly with two tablespoons of the seasoning mixture (you may have some left over). 

  • Cook for 8 minutes, then flip the shrimp over. Cook for another 2 minutes until fully cooked through. 

  • Serve in tacos shells, a rice bowl, or by themselves with an extra squeeze of lime.
