Crispy Parmesan Cauliflower

Roasted cauliflower has always been one of my favorite vegetables. What I love about it is the expected garlicky taste with crispy texture. What I did to enhance those flavors was adding onion and parmesan cheese. This cauliflower is even more flavorful and crunchier than any other I have ever had. Parmesan cheese does it again, making this dish even more delicious!

Yields: 5 servings

Prep Time: 5 minutes

Total Time: 50 minutes


Ingredients:

  • 1 head of cauliflower, cut into small florets

  • ½ of a medium sized white onion, thinly sliced

  • 4 sprigs of thyme

  • 3 garlic cloves, thinly sliced

  • 3 tablespoons of olive oil

  • Kosher salt

  • Black pepper

  • ½ cup of grated parmesan cheese

Instructions:

  • Preheat the oven to 425º F.

  • Place your cauliflower florets, onion, thyme, and garlic into a large rimmed baking sheet and coat evenly with olive oil. Sprinkle with salt and pepper.

  • Place into the oven and cook for 35 minutes, turning once halfway through.

  • After 35 minutes, take the cauliflower out of the oven and sprinkle it with parmesan cheese. Cook for another 10 minutes, or until cauliflower is golden brown and crispy.
