Broccoli Zucchini Fritters with Yogurt Dipping Sauce

These fritters are the perfect crispy meal, or snack, that also pack in a ton of vegetables. They are so easy to make and pair perfectly with the garlic yogurt dipping sauce, which tastes so similar to tzatziki, yet it’s only three ingredients!

Yields: 10 fritters

Total Time: 45 minutes

Ingredients:

Batter

  • 2 cups of fresh, chopped broccoli (1 small bundle)

  • 2 medium sized zucchini, grated

  • 3 large eggs

  • ½ cup of all purpose flour

  • ⅓ cup of grated parmesan cheese

  • 3 scallions, finely chopped

  • 1 garlic clove, minced

  • Black pepper

  • Oil for frying (olive or vegetable oil)

Yogurt Sauce

  • ⅔ cup of greek yogurt

  • 2 cloves of garlic, minced

  • ¼ teaspoon of salt

Instructions:

  • First chop your broccoli into 1 inch florets and steam until tender. For a quick steam, pour ½ inch of water to the bottom of a pan, add in the broccoli, and simmer for 5 minutes, covered. Once steamed, drain water and let it cool slightly.

  • While the broccoli is cooking, grate your zucchini and, once grated, place the zucchini onto a large kitchen towel and squeeze all of it’s water out over a sink.  

  • In a large bowl, whisk together the eggs, flour, parmesan cheese, scallions, garlic, and black pepper. 

  • Add in the steamed broccoli to the egg mixture and, using a potato masher, break down the broccoli florets. Once the broccoli is broken down a bit, fold in the zucchini. 

  • Heat 2-3 tablespoons of olive oil over medium heat in a large frying pan. Scoop a heaping 2 tablespoons of the batter onto the pan (with room between each) and cook for 5-7 minutes per side, or until golden brown. 

  • To make the dipping sauce, mix together the yogurt, garlic, and salt in a small bowl.
